Tofu hummus 

Snack / serves four / 10 minutes

Ingredients

1 block of tofu, 250 g – 100 g chickpeas, drained – 2 Tbsp. tahin – 1 Tbsp. ground ginger – 4 Tbsp. olive oil – 4 Tbsp. water – juice of 1 lemon + grated zest of ¼ lemon – 1 garlic clove, chopped – salt and pepper – 1 bunch of young carrots

Preparation:

1. Drain the tofu. Wrap in a tea towel and squeeze until no more liquid comes out.

2. Put the tofu in a measuring jug or tall container. Add the chickpeas, tahin, ground ginger, olive oil, water, lemon zest and juice, garlic and salt and pepper to taste.

3. Blend until smooth and creamy.

4. Scrape the carrots and cut into long fingers for dipping.

5. Serve the carrot fingers with the hummus.
