This authentic mapo tofu is the favorite recipe of Naresh from Nareshtaurant.
1 Tbsp. oil – 2 cm fresh ginger – 1 large clove of garlic, finely chopped – 50 g pork mince – ½ Tbsp. chili bean sauce – ½ Tbsp. black bean and garlic sauce – 1 Tbsp. cornflour – 200 ml water – 50 g garden peas – 100 g soft tofu, cubed – 75 g boiled rice – ½ Tbsp. chili pepper flakes – a handful of tatsoi or firm spinach
1. Heat 1 tablespoon of oil in a pan. Sauté the ginger and garlic for one minute. Add the pork mince and fry for two minutes.
2. Mix in the black bean and garlic sauce and the chili bean sauce. Fry gently for two minutes.
3. Mix the cornflour with the water and pour into the pan. Add the peas and the tofu. Don’t stir any more. Leave to simmer on a gentle heat for five minutes.
4. Arrange the rice on a plate. Spoon the mapo carefully onto the rice and scatter some chili pepper flakes on top. Garnish with tatsoi or spinach.
