Green salad with grated tofu

Lunch / serves three / 15 minutes

Ingredients

½ block of tofu (125 g) – green herbs (4 sprigs of basil, 15 chives, 4 sprigs of parsley) – 4 Tbsp. oil – 1 Tbsp. vinegar – salt and pepper – 1 butterhead lettuce, washed and torn roughly – 1 tin of edamame beans (155 g) – 1 avocado, quartered – 100 g pistachios, peeled 

TIP: delicious with ciabatta!

Preparation:

1. Put the herbs in a blender with the oil and vinegar and chop until fine.

2. Grate the tofu roughly using a box grater. Mix it through the herb mixture and leave to marinate for 10 minutes.

3. Make a salad by mixing the butterhead lettuce, tofu, edamame beans, avocado and pistachios in a large bowl.
