Tofu sandwich with hummus

Lunch / serves three / 15 minutes

Ingredients

1 block of SoFine tofu (250 g) – 2 Tbsp. oil – 1½ tsp curry powder – ½ tsp onion powder – ½ tsp garlic powder – 1 mini cauliflower, in florets – ¼ tsp salt – 6 slices of bread – 150 g hummus – 50 g mixed lettuce

Preparation:

1. Wrap the tofu in a tea towel, place something heavy on top and leave like this for 10 minutes. Remove the tofu from the tea towel and mash with a fork.

2. Heat 1 tablespoon of oil in a frying pan. Put the curry powder, onion powder and garlic powder into the hot oil. Stir with a wooden spoon to mix the spices well.

3. Add the tofu and cauliflower. Fry until the tofu and cauliflower florets turn light brown. Turn off the heat and add the salt.

4. Spread the slices of bread with hummus, spoon the tofu and cauliflower mixture on top and garnish with the lettuce.
